Recipe(tried): Scalloped Eggs
Breakfast and BrunchSCALLOPED EGGS
1 Lb. Asparagus cut up
1/4 cup chopped onion
3 Tablespoon butter
3 Tablespoon flour
2 1/2 cups milk (better with Half & Half)
2 cups shredded cheddar cheese( or mix cheddar and swiss)
12 hard-boiled eggs - sliced in 1/2
1/2 Lb. Cubed Ham (you can leave Ham out)
*If you like add sliced black olives
*You also could add potato chips on top of the eggs then add warm cheese mixture on top. Kids like this!
In a frying pan over medium-high heat, saute the onion and asparagus in butter until lightly cooked. Add the flour, milk and cheese and stir until the cheese is melted and the mixture is slightly thickened. Remove from heat.
Preheat the oven to 350 degrees.
In a lightly-greased 8 1/2 by 13 baking dish, layer all of the egg slices. Pour warm cheese mixture over the eggs.
Add more cheese on top.
Bake for 30 minutes. Allow the dish to cool at least 10 minutes before serving.
