Recipe(tried): Pumpkin Pancakes

Pumpkin Pancakes

1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 TBSP. vegetable oil
2 TBSP. vinegar
2 cups all purpose flour (I mix half whole wheat flour with half white flour) - I usually sprinkle in some wheat germ too
3 TBSP. brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground allspice
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. salt

In bowl, mix together the milk, pumpkin, egg, oil, and vinegar.

In another bowl, combine dry ingredients. Stir both mixtures together just enough to combine.

Heat a lightly oiled griddle or frying pan over medium high heat.

Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
