Recipe(tried): Quiche Lorraine

Breakfast and Brunch
QUICHE LORRAINE

1 unbaked (9-inch) pastry shell
4 slices bacon
1/4 cup finely chopped onion
1 1/2 cups shredded cheddar cheese
4 eggs slightly beaten
1 1/3 cups milk
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon ground white pepper
1/8 teaspoon ground nutmeg

Preheat oven to 450 degrees F.

Bake pastry shell for five minutes. Remove from oven.

Set oven temperature to 400 degrees F.

Fry bacon until crisp; drain and crumble. Set aside.

Cook onion until transparent in small amount of bacon fat; drain.

Sprinkle bacon and onion over bottom of pastry shell. Cover with cheese. Set aside.

Mix together eggs, milk, and seasonings. Pour over cheese.

Bake at 400 degrees F for 10 minutes. Reduce heat to 350 degrees F and bake for 30 to 35 minutes longer or until a knife inserted in center comes out clean.
