Recipe: Seafood Alfredo (Easy)

SEAFOOD ALFREDO

1 pkg. commercial alfredo sauce mix
Seafood in any combination desired. Fresh or cooked leftover seafood or poultry
Onion, chopped
Green or red bell pepper, chopped
Mushrooms, sliced
1 clove of garlic, minced
Olive or vegetable oil
Egg noodles or rice

Follow directions on package of Alfredo sauce mix. Saute seafood quickly, set aside. In same pan add onions, peppers, mushrooms and garlic and saute until soft. Mix seafood, vegetables and Alfredo sauce. Serve hot with noodles or rice of choice. Can be ready in 15 minutes.


SEAFOOD ALFREDO

3/4 lb. raw shrimp
3/4 lb. fresh fish fillets (cod, haddock, flounder, or your choice)
3 tbsp. butter
1/23 tsp. garlic powder
1/2 tsp. Old Bay seafood seasoning
2 pkgs. Lipton Noodles Alfredo

Remove shells from shrimp; clean and devein. Cut shrimp and fish into bite-size pieces. Melt butter in deep pan. Add shrimp and fish and saute until just done. While cooking, sprinkle with garlic powder and Old Bay. Remove from pan with slotted spoon and set aside. Use same pan and prepare Noodles Alfredo according to directions. When noodles are done, add shrimp and fish. Sprinkle with parsley if you wish.


Seafood Fettuccini

24 oz dry fettuccini noodles
3/4 pint heavy whipping cream (1 1/2 cups)
1/2 cup grated parmesan
3/4 cup grated romano
1 1/4 cup butter
several cloves of garlic, minced or pressed
1/4 lb bay shrimp, cooked
1/4 lb scallops
1/4 lb crab meat (or krab)
garlic salt
salt and pepper

Put on a large pot of water to boil. Add a dash of olive oil if you like (I usually do) and some salt. When it reaches a boil, add the fettuccini noodles and cook al dente (about 10 minutes). Drain. In a large skillet on medium heat, melt 1/4 cup butter. Add a couple of cloves of minced or pressed garlic, to taste, and some garlic salt if you wish. When it is hot and bubbling, add the scallops. Cook until tender and no longer translucent. (2-5 minutes). Turn to low heat, add the shrimp and crab. Let simmer on low while finishing the sauce. In a large saucepan on low heat, melt 1 cup butter into the cream until smooth. Turn to medium heat, and slowly add the cheese until melted. Stir constantly. This will thicken the sauce. Add minced garlic, garlic salt, and salt and pepper to taste. (1/4tsp salt, 1/4tsp pepper, and 2-3 cloves of garlic would be fairly "average"). Add the seafood to the sauce, stir gently, and add the noodles to the sauce. Toss, and serve immediately.
