Holidays, CelebrationsThe only idea that occurs to me is to pour some (warmed) enchilada sauce in the bottom of the pan that you will serve the chicken in. If your recipe will let you spoon some of the sauce over the chicken, all the better. Another precaution would be to put out smaller amounts at a time, and "refresh" the dish often, so the chicken isn't sitting out too long. If you come up with a better solution, let us know!
