Recipe: Seven Layer Casserole

This has been a family favorite for as long as I can remember. It goes together quite quickly, but don't forget it takes 1-1/2 hours to cook.

Layer the following in a 2 qt. casserole dish:

1] 1 cup uncooked rice (use quick-cooking rice)

2] 1 cup whole kernel corn, drained

3] Sprinkle with salt & pepper; pour over 1 can (8 oz.) tomato sauce and 1/2 can water

4] 1/2 cup each finely chopped onion and green pepper

5] 3/4 lb. uncooked lean ground beef

6] Sprinkle with salt & pepper; pour over a second can (8 oz.) tomato sauce and 1/4 can water

7] Cover meat with 4 strips of bacon, cut in half

Cover and bake for 1 hour at 350. Uncover and bake 30 minutes longer, until bacon is crisp.
