Shaker Style Cranberry Relish (with pineapple, brown sugar, mandarin oranges, apple, and spices)

1 (20 oz.) can unsweetened crushed pineapple
1 cup brown sugar
2 cups cranberries
1 can mandarin oranges, drained
1 tart apple, peeled and chopped
Dash of ground ginger, cinnamon,
cloves and cardamom (optional)

Combine pineapple and brown sugar in saucepan and heat until well mixed.

Add cranberries and simmer, covered for 10 minutes. Then simmer, uncovered, for 10 minutes.

Add mandarin oranges and simmer another 10 minutes.

Add chopped apples and optional seasonings. Remove from heat and serve chilled.
