I found these notes on internet - I hope this helps. It sounded more like a recipe for Alfredo Pasta with shrimp. Halyna
I don't have a formal recipe but here is what I do:
Seed tomatoes and cut them in a fine dice, you will need about 1 cup (4 servings). Toss them with a clove of minced garlic, shredded fresh basil, a splash of oil and vinegar - just to moisten. Set aside to marinate.
Bring a humongus pot of water to a boil, add salt and cook a 1lb box of penne according to the directions on the box.
Make an alfredo sauce - heat 1 cup heavy cream blended with 1 teaspoon cornstarch and 1/4 cup butter, don't boil. Whisk in 1/2 cup freshly grated parmesan cheese or to taste. (I have been using asiago these days as I prefer the flavor)keep warm.
Saut shrimp in butter, season with s&p.
Place drained pasta (I toss the pasta in a bit of butter so it does not stick together) on 4 plates, top with sauce, shrimp and sprinkle with the tomatoes.
