SHRIMP IN OYSTER SAUCE

1 lb. large shrimp, peeled
2 1/2 Tablespoons soy sauce
2 1/2 Tablespoons dry sherry
1 teaspoon grated fresh ginger
1/4 lb. coarse ground pork
Peanut oil
A few matchstick size pieces fresh ginger
2 garlic cloves, sliced
2 green onions, chopped
2 Tablespoons oyster sauce
1/2 Tablespoon dow see, (fermented black beans) rinsed, drained and mashed
1 egg
Pinch of brown sugar, if needed
Marinate shrimp in 2 Tablespoons soy sauce, 2 Tablespoons sherry and a bit of grated ginger for 15 minutes.
In another bowl marinate for the same amount of time the pork in 1/2 Tablespoon soy, 1/2 Tablespoon sherry and a bit of grated ginger.
Chow or stir-fry the pork in a bit of peanut oil in a wok. Cook just until color changes. Remove pork and rinse wok.
Heat 2 Tablespoons oil, add ginger matchsticks and garlic. When they have cooked for a moment add the drained shrimp and toss them in the hot oil.
Cook just a few moments then add onion and pork. Add oyster sauce and dow see. Toss contents of wok together to mix and add egg to thicken. You may add pinch of sugar to counter saltiness if needed.
Makes 4 to 6 servings.
