SHRIMP CASSEROLE
1/8 cup margarine
1 cup chopped onion
1/2 cup chopped celery
1 bottle clam juice
1/2 cup half and half
2 tbsp. lemon juice
1 1/2 lb. shrimp, peeled and deveined
1/3 cup chopped fresh dill
2 1/2 to 3 cups cooked rice
1 cup crumbled feta cheese
In large skillet heat margarine, add onion and celery. Saute.
Add clam juice, half and half, and lemon juice. Increase heat and cook 10 minutes.
Add shrimp and cook until pink, maybe 2 to 3 minutes. Stir in dill.
In casserole layer rice and feta cheese and shrimp mixture. Cover with wax paper and bake about 20 to 30 minutes or until hot. Do NOT over cook.
Serve with hard rolls or French bread and a fresh fruit salad.

This recipe is from an old cd that I have that includes recipes from community cookbooks. It doesn't give the original source for the recipe or even the name of the cookbook it appeared in, but I'm hoping it's close to the one you're looking for. If not, let us know if you can remember any other ingredients and we'll keep looking.
