SIMPLE CINNAMON CAKE
2 cups sifted Swans Down Cake Flour
4 teaspoons ground cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup vegetable shortening, softened
1 1/3 cups sugar
2/3 cup milk
3 large eggs
Cream Cheese Frosting (recipe follows)
Preheat oven to 350 degrees F. Butter and flour an 8-inch square baking pan, knocking out excess.
TO MAKE THE CAKE:
In a bowl, whisk together flour, cinnamon, baking powder, and salt.
In another bowl with an electric mixer beat together shortening and sugar until light and fluffy. Beat in milk until combined. Beat in eggs, 1 at a time, beating well after each addition. Add flour mixture and beat until smooth. Spread batter into prepared pan.
Bake in middle of oven 30 minutes, or until a tester comes out clean. Cool cake on a rack.
Spread frosting over cooled cake.
CREAM CHEESE FROSTING
4 ounces cream cheese, softened
1/2 stick unsalted butter, softened
1 1/2 cups plus 2 tablespoons confectioners' sugar, sifted
In a bowl with an electric mixer beat together cream cheese and butter until smooth. Gradually beat in confectioners' sugar until combined.
