Recipe(tried): Simple Pasta Salad (diabetic recipe)

Salads - Potato, Pasta
Susan,

I'm diabetic myself and just found a great pasta to use for traditional recipes. The brand is DreamFields. Taste like regular pasta, unlike most of the wheat and soy types, with only 5 NET Carbs per serving.

One of my favorite recipes is for a SIMPLE PASTA SALAD:

1 (16 oz) box Dreamfields Penne
1 1/2 cups mayonnaise
1 pkg Hidden Valley Ranch dressing dry mix
Bacon bits

Cook pasta per instructions on box. Drain and wash with cold water.

Combine cooked pasta and all ingredients. Add more or less bacon bits to taste.

Refrigerate unused portion. Add a pinch of mayonnaise prior to serving.

I hope this helps with his diet. I know that it really allowed me to enjoy pasta again.
