Recipe: Simple Pesto (no nuts, Country Cooking magazine, 1980's)

3 cloves garlic, peeled
1 cup tightly packed fresh basil leaves without stems
1/2 cup freshly grated Parmesan cheese
1/4 cup virgin olive oil
Put garlic and basil in container or food processor. Process briefly. Add cheese and process. Add the oil, while blending, one drop at a time, unto a thick paste is formed.
Makes about 3/4 cup
