Recipe: Sliced Sweet Potato Pie

This is from "Farm Journal's Complete Pie Cookbook". They describe this particular recipe as "lucious". Hope this helps. They also have a recipe for a " Sweet Potato Custard Pie".

Sliced Sweet Potato Pie

Pastry for 2---crust pie
1 1/2 lbs. sweet potaoes ( 4 medium )
1/2 c. light brown sugar
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. salt
6 Tbls. butter or margarine
1/2 c. heavy cream

Boil sweet potatoes until half cooked, 15 to 20 minutes. Peel and slice thinly.

Mix sugar, spices and salt.

Place a layer of sweet potatoes in pastry--lined 9 inch pit pan, sprinkle with some of the sugar--spice mixture and dot with a little butter. Continue until all ingredients are used, dotting top with butter. Add cream. Adjust top crust; flute edges and cut vents.

Bake in hot oven ( 425 degrees) 30 to 40 minutes. If potatoes are still not tender, reduce temperature to 350 degrees and continue baking until they are done.
