Servings: 6
1 (8 oz.) package cream cheese at room temperature
1 small can (6 1/2 oz.) smoked salmon*
1/2 cup ground pecans
1/4 cup grated cheddar cheese
1/2 teaspoon horseradish
1 quick shake of Worcestershire
1 teaspoon lemon juice
Mix all ingredients together and roll into a ball. Roll in either chopped nuts or chives. Cover with plastic wrap and refrigerate until ready to use.
Serves 4 to 6 people as an hors d'oeuvre.
*If smoked salmon is unavailable use canned salmon and 1/8 teaspoon of liquid smoke. Use more liquid smoke if you like a stronger flavor.
SALMON CHEESE BALL
Servings: 6
4 cups smoked salmon
1 (8 oz) package cream cheese, softened
1 cup sour cream
1/4 cup chopped onion
1 tsp salt
1 tsp pepper
1 pinch tarragon
1 tbsp lemon juice
Finely flake smoked salmon. Blend together with remaining ingredients. Shape into ball. Roll in chopped nuts or parsley if desired. Serve with crackers.
This salmon ball freezes beautifully.
SMOKED SALMON- CREAM CHEESE BALLS
From: Leslie WA
2 (8 oz.) packages of cream cheese, softened
8 oz. smoked salmon, finely chopped
3 green onions, finely chopped
1/4 cup sour cream
1 tsp. Worcestershire sauce
1/2 tsp. prepared horseradish
1/4 tsp. garlic powder
1/4 tsp. pepper
TOPPING:
3/4 cup finely chopped walnuts
1/4 cup fresh parsley
Combine first 8 ingredients in medium bowl; stir well. cover and chill at least 1 hour.
Shape salmon mixture into 3 balls. combine chopped nuts and chopped parsley; roll balls in walnut mixture. Cover and chill at least 4 hours.
Serve with assorted crackers.
SALMON PARTY SPREAD
1 (15 1/2 oz.) can salmon, drained
1 (8 oz.) pkg. cream cheese, softened
1 tbsp. lemon juice
1 tsp. onion, grated
1 tsp. prepared horseradish
1/2 cup walnuts, chopped
2 tbsp. snipped parsley
Assorted crackers
Flake salmon, discarding skin and bones.
In mixing bowl, stir together cream cheese, lemon juice, onion and horseradish. Add salmon; mix well.
Chill thoroughly.
Form salmon mixture into 8-inch long log.
Combine walnuts and parsley; roll log in nuts. Cover and chill.
Serve with assorted crackers.
