BROCCOLI OR SPINACH QUICHE
1 pie crust-prick it and bake it for 5 minutes
4 oz. shredded cheese (Swiss, Cheddar)
1/2 cup onion sauteed in butter or margarine
4 eggs (or egg substitute)
1 cups half and half (I use no-fat)
5 oz. cooked and drained broccoli or spinach
1/2 tsp. salt
dash nutmeg
dash pepper
Sprinkle cheese on crust. Mix all other ingredients and pour over cheese. bake at 350 degrees about 30-35 minutes or until knife comes out clean. Let stand 10 minutes before serving.

1 Pound Bacon
8 Oz Cream Cheese -- softened
8 Oz Cheddar Cheese -- shredded
1/4 Teaspoon Onion Powder
1/8 Teaspoon Garlic Powder
1 Teaspoon Worcestershire Sauce
Chopped Nuts
Cook bacon; drain and crumble. Combine with rest of ingredients (except nuts) and form into ball. Roll in nuts. Serve with crackers as an
appetizer.
Gina,Fla (04:29:15) : Cream of Broccoli and Cheese Soup
1 tbls. butter, melted
1/2 med. onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half
2 cups chicken stock or bouillon (I use SUPERIOR TOUCH BETTER THAN BOUILLON CHICKEN BASE)
1/2 lb. fresh broccoli (I use a whole rubber-banded bunch)washed, cut up and save the stems for the salad
1 cup carrots, julienned (I grate mine)
salt and pepper to taste
1/4 tsp. nutmeg
8 ozs. grated sharp cheddar
1. Saute onion in butter. Set aside.
2. Cook melted butter and flour (make a roux) using a whisk over med. heat for 3-5 mts. Stir constantly and slowly add the half-and-half. Add the chicken stock whisking all the time. Simmer for 20 mts.
3. Add the broccoli, carrots and onions. Cook over low heat till veggies are tender for 20-25 mts. Add salt and pepper. The soup should be thickened by now.
4. Pour in batches into blender and puree.
5. Return to pot and add the grated cheese and stir til well blended.
6. Put on low heat and stir the nutmeg. This soup serves 6 and can be easily doubled. It is unbelievably delicious!!

Spicy Coconut Fried Shrimp
1 fresh coconut
16 peeled and deveined large shrimp
One half cup breadcrumbs
2 eggs, beaten
One half cup half & half
Cayenne pepper
Punch holes in the eyes of the nut and drain liquid. Place nut in
350
degree oven for 10-15 minutes until shell cracks. Scoop out inside
flesh
with butter knife. Combine half cup of shredded fresh coconut with
bread
crumbs. Combine beaten eggs, half & half and cayenne pepper. Dip
shrimp in batter mixture, roll in breadcrumb mixture until evenly
coated. Fry in hot oil until lightly brown. Serve with dipping sauce of choice.
Serves two as entree.

Eight-Layer Appetizer Spread

lettuce leaves
3/4 cups vegetarian refried beans
4 ounces diced green chili peppers, drained
several dashes bottled hot pepper sauce
8 ounces light dairy sour cream
1/3 cup salsa
3/4 cups chopped avocado
1/2 cup finely shredded reduced fat Monterey jack or cheddar cheese 2 ounces
1/3 cup sliced green onion
1 cup chopped lettuce
1 small tomato -- seeded and chopped about 1/2 cup
10 ounces light tortilla chips, about 8 cups
Partly line a serving plate with lettuce leaves. Stir together refried beans, chili peppers, and hot pepper sauce in a small bowl. Spread bean mixture over the lettuce leaves, making a layer about 1/4 inch thick. Spread sour cream in a layer atop the beans. Spoon a layer of salsa atop the sour cream; swirl salsa into sour cream. Sprinkle with avocado, cheese, green onions, lettuce, and tomato. Serve with tortilla chips.

Here is a good recipe for Puppy Chow that I serve as an appetizer at parties...
Puppy Chow
makes 9 cups
1 c. semi-sweet chocolate chips
9 c. of your favorite Chex cereal (Corn, Rice and/or Wheat)
1/2 c. peanut butter
1/4 c. butter
1 T. vanilla extract
1 1/2 c. powdered sugar
Pour cereals into large bowl, set aside. In a 1 qt. microwaveable safe bowl, combine chocolate chips, peanut butter and butter. Microwave til smooth, for 1 minute, then take out and stir. Stir in vanilla. Pour the mixture over the cereals till well coated. Pour cereal mixture into a large resealable plastic bag with powdered sugar, seal and shake. Spread on waxed paper to cool.
Stovetop:
Pour cereals into a large bowl. Set aside. In a small saucepan, melt chocolate, peanut butter and butter til smooth stirring constantly. Remove from heat, stir in vanilla. Continue as indicated above.

5 cups Cheerios
5 cups Corn Chex
2 cups salted nuts
1 pound M&Ms plain chocolate candy
2 packages (12oz each) vanilla chips
3 tablespoons veg. oil
In a large bowl, combine the first 5 ingred.; set aside. In a microwave bowl, heat chips and oil on med-high for 2 min., stirring once. Microwave on high 10 sec., stir until smooth. Pour over cereal mixture and mix well. Spread on 3 waxed paper-lined baking sheets. Cool; break apart. Store in airtight container. Yield: about 5 qts
