Recipe: Snowbird's Brunch Waffles

Snowbird's Brunch Waffles

Here is a wonderful waffle recipe. I like it because it is lighter and crispier than your normal waffles. The recipe came from a local TV cook named the Gabby Gourmet and he in turn got the recipe from the ski resort named Snowbird. This is all here in Utah, by the way.

2 cups sifted cake flour
2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons baking soda
3/4 cup melted butter
2 eggs, separated
2 cups buttermilk (can also use regular milk)

Combine and sift dry ingredients in a large bowl. Combine the butter, egg yolks, and buttermilk, then stir into the dry ingredients, mixing well. Beat the egg whites stiff, then fold into the basic mixture. Heat waffle iron, spray or brush with melted butter or oil. Pour batter to fill the hot iron, then close and cook into a golden brown.

Top with whatever you like, i.e., syrup of choice, whipped sweetened cream, and fresh fruit (raspberries and blueberries combined are a good choice also).
