Recipe(tried): Sourdough Coffee Cake

Hi Jack, So happy to find another sourdough fan. I make bread every week simply because my children won't eat store bought bread now, but I don't mind it is rewarding to see my husband & them enjoy so much. I can't wait to try your recipe it sounds great.

Here is a very simple and quick sourdough Coffee Cake recipe. I use the starter which has instant potatoes in it, but I imagine any would be fine. The great thing about this is you don't have to set the starter out to reach room temperature, although it can be made after feeding step as you would bread.

SOURDOUGH COFFEE CAKE

1 cup sourdough starter
1 cup all-purpose flour
3/4 tsp. baking soda
1 egg
1/2 cup oil
1-1/2 tsp. vanilla
1/2 cup sugar

MIX all above ingredients together well. Pour into 8x10-inch pyrex baking dish that has been sprayed with cooking spray.

TOPPING:
1/2 cup chopped nuts (I use pecans)
1/2 cup brown sugar
1 tsp. ground cinnamon
1 tsp. flour
1/2 stick butter (melted)

Mix topping ingredients together until crumbly; sprinkle on cake.

Bake at 350 degrees F for 30 minutes

VARIATION:
I also double the topping and add butter flavoring to the cake mixture. But, it is fine as it reads.
