Recipe: Sourdough Friendship Muffins and cake

Breads - Sourdough, Friendship

Nan/SC,
Here is a recipe could go with your "friendship tea". This is the only "friendship muffin" recipe I'd ever seen. Soutnds interesting, huh?

===============================
Sourdough Friendship Muffins

To start this sourdough combine 2 cups each flour milk and sugar. Then do
the following. Please keep your dough in a large container on the counter!!

The day you get your dough is day one.

Days 1,2,3,4:- stir well each day.
Day 5:- Add 2 cups flour, 2 cups milk and 2 cups sugar.
Days 6,7,8,9:- stir well each day
Day 10:- add 2 cups, flour, 2 cups sugar ,2 cups milk.
Then do the following:-

Measure out 6 cups of base and give 2 cups each to 3 friends along with
recipe.
To the remaining dough add:-

1 and 1/2 cups oil
6 eggs
4 cups flour
2 cups sugar
4 teaspoons baking powder
3 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cloves
4 teaspoons cinnamon
4 teaspoons vanilla extract
1 14 oz can Applesauce or crushed pineapple
2 cups raisins.

Beat liquid ingredients well. Mix dry ingredients in a separate bowl and
then add dry to wet just enough to moisten ( if you find the mixture
slightly liquidy this is fine it will bake well.), add applesauce (or
Pineapple) and raisins. Bake at 350-375 for 18-20 minutes. Makes 4 dozen
large muffins.
( The following recipe is not necessary to do, do this only if you
wish to have cakes. Instead of baking muffins, add the following to the
mixture to the muffin dough to make Christmas cakes.)

For dark fruitcake

Add the following to the muffin dough:-

pkg currants
2 pkgs almonds
1 pkg raisins
1 container each green and red cherries
2 100 grams mixed peel
11/2 cups molasses ( or to taste, for light fruitcakes omit molasses)

Add molasses with liquid ingredients in muffin dough. Then add the above
mixing well. Bake at 300F for approx 2 hours. Makes 4 loaf cakes. For fruit
muffins, bake at 350F for 18-20 minutes. This dough makes 3 dozen muffins
and 2 round cakes. Bake round cakes same as loaves.
For freshness in freezing, wrap cakes in saran wrap and then in tinfoil,
or get cheesecloth and soak in brandy or rum. Wrap around the cakes and
store in a cool dark place.
