Hi Karyn,
This is my favorite recipe for using frozen corn. I've been making it a lot lately because it is so quick & tastes good for either a main dish or a side dish. The recipe serves 1, but can be easily doubled or tripled. In fact, I don't even measure the ingredients - I just mix them together & it comes out tasting good with whatever proportions I use.
Southwest Black Bean Salad
Romaine lettuce
1/2 cup black beans, rinsed and drained
1/2 cup frozen corn, thawed
1/2 cup tomatoes, chopped
1/4 cup red onion, chopped
chopped jalapeno pepper, optional
Southwest Ranch Salad Dressing
Fill bowl with lettuce & set aside. Combine beans, corn, tomatoes, and onion. Top lettuce with mixture. Garnish with chopped jalapeno, if desired.
Top with Southwest Ranch salad dressing.
