Recipe(tried): Southwestern Lime Grilled Chicken

Tina, this is a favorite in my house. I make it at least a couple times a month.

Southwestern Lime Grilled Chicken

1/2 cup fresh lime juice (or lemon)
6 tablespoons soy sauce
1/4 cup vegetable oil
2 tablespoons sugar
2 tablespoons chopped fresh oregano (or 2 tsp. dried)
2 teaspoons chili powder
1 teaspoon cayenne pepper
8 skinless boneless chicken breast halves

Mix all ingredients. Marinate overnight. Grill. Reserve Marinade and boil for about 5 minutes, adding water if needed. Serve sauce with chicken.

Note: I usually marinate all day. I use the reserved marinade to baste the chicken while it is cooking. i find this makes the chicken more moist and juicy.
