SOUTHWESTERN STYLE BUTTER
3/4 cup fresh cilantro leaves, packed
1 1/2 tbsp. fresh jalapeno pepper, chopped (or to taste)
1 tsp. lime peel, grated
1 stick (1/2 cup) butter
1 tbsp. lime juice
1/4 tsp. salt
1/8 tsp. ground red pepper
Using a food processor, finely chop cilantro, jalapeno pepper and lime peel.
Add butter, lime juice, salt and red pepper. Combine well.
Simmer in a pan for 2 minutes. Use as a baste.
