SPUMONI SLICES
FOR COOKIE DOUGH:
1/2 cup butter (no substitutes)
1/2 cup shortening
1 cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 egg
2 tbsp milk
1 tsp vanilla
3 cups flour
FOR CHOCOLATE LAYER:
1 oz semi-sweet chocolate, melted and cooled
2 tsp milk
FOR RED LAYER:
1/3 cup chopped candied red cherries
few drops red food coloring
FOR GREEN LAYER:
1/2 cup finely chopped pistachio nuts
2 tsp milk
1/4 tsp rum flavoring
few drops green food coloring
Beat butter and shortening in a mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking soda, and salt; beat until combined. Beat in egg, 2 tbsp milk, and vanilla until combined. Beat in as much flour as you can. Stir in remaining flour with a wooden spoon.
Divide dough into thirds.
- Mix chocolate and 2 tsp milk into one portion.
- Mix cherries and red food coloring into another portion.
- Mix nuts, 2 tsp milk, rum flavoring and green food coloring into remaining portion.
TO SHAPE DOUGH:
Line bottom and sides of an 8x4x2-inch loaf pan with clear plastic wrap. Press pink dough evenly into pan. Top with chocolate dough, then green dough. Cover and chill for 4 to 24 hours or until firm.
Invert pan to remove dough. Remove plastic wrap. Cut dough into 1/4-inch thick slices; cut each slice crosswise into three pieces (each piece should have 3 colors, not just one). Place 2-inches apart on an ungreased cookie sheet.
Bake in a 375 oven for 8 to 10 minutes or until edges are firm and bottoms are lightly browned. Transfer to wire racks and cool.
Makes about 84 cookies
