Recipe(tried): Souzana ISO Diabetic Oatmeal Cokkies

Dear Souzana, My daughter has usd the Vanishing Oatmeal Raisin Cookie recipe
which is found on the Quick Quaker Oats box, substituting Sugar Twin Brown
sugar replacement for the brown sugar called for and Sugar Twin (powdered) for
the white sugar. She omits the raisins and adds just a little more vanilla to
the recipe. Here it is if you don't have the box. Hope you enjoy! Dena in Oregon

Vanishing Oatmeal Cookies

1 cup (2 sticks) margarine or butter, softened
1 cup Brown Sugar Twin substitute
1/2 cup Sugar Twin
2 eggs
1 tsp vanilla (or more if you like)
1 1/2 cups all-purpose flour
1 tsp cinnamon
1/2 tsp salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins (optional)

Heat oven to 350 degrees.
Beat together margarine and sugars until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda , cinnamon and salt; mix well
Stir in oats and raisins (if using); mix well.
Drop by rounded spoonfuls onto ungreased cookie sheet.
Bake 10 to 12 minutes or until golden brown.
Cool 1 minute on cookie sheet; remove to wire rack.
Makes about 4 dozen
