4 pounds bone-in pork loin roast
12 ounces pineapple preserves
2 tablespoons honey
1 teaspoon prepared yellow mustard
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon

8 ounces pineapple slices, drained (for garnish)
Preheat oven to 325 degrees F.
Place roast on rack in shallow roasting pan; insert meat thermometer into thickest part of roast, not touching bone.
Roast, uncovered, in 325 degree F oven until meat thermometer registers 170 degrees F., about 2 1/4 hours.
Meanwhile, combine pineapple preserves, honey, mustard, vinegar, salt, cinnamon and cloves in small saucepan; cook, stirring constantly, over low heat until preserves melt.
During last 20 minutes of roasting time, garnish roast with pineapple slices and brush with pineapple glaze several times.
