Recipe: Cabbage With Knockwurst and Apples

CABBAGE WITH KNOCKWURST AND APPLES

4 tbsp. butter or margarine
4 knockwurst, split through
1 med. onion, sliced
1 1/2 lb. cabbage, sliced
1/4 c. brown sugar
1 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. black pepper
3 tbsp. vinegar
1/2 c. water
2 tart apples, peeled and wedged

In a large skillet, melt 2 tablespoons butter or margarine. Add split knockwurst and brown slowly on both sides. Remove them to plate. Add remaining butter or margarine to skillet, the sliced onion and cabbage. Cook and stir for 2 minutes then cover and cook over low heat for 5 minutes. In a small bowl, combine brown sugar, salt, pepper, vinegar and water. Return knockwurst to pan. Add apple wedges and pour on brown sugar mixture. Heat to boiling, lower to simmer. Cover and cook just until apples are tender. Serve at once.
