Recipe: Spicy Gingerbread Scones

2 cups flour
3 Tbsp brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground ginger
2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup butter
1 egg yolk, beaten
1/3 cup molasses
1/4 cup milk
1 egg white, beaten

Preheat oven to 400F. In large bowl, stir together flour, sugar, baking powder, baking soda, and spices. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center. In a small bowl, stir together egg yolk, molasses and milk. Add to center of flour mixture and combine with a fork, mixing well. Mixture will be dry in texture. Turn dough onto a lightly floured surface. Quickly knead dough for 10 to 12 strokes until nearly smooth. Pat into a 7 circle and cut into 8 wedges.
Arrange wedges 1 apart on an ungreased baking sheet. Brush with egg white and sprinkle with sugar. Bake in a 400F oven for 12 to 15 minutes, until light brown. Best when served warm.
Yield: 8 servings
