Recipe(tried): Spicy Sandwich Toast (a snack)

Spicy Sandwich Toast

Filling
300g canned tuna fish in brine, drained and set aside
100g prawn meat, diced
Ground ingredients
5 cili padi (bird's eye chillies)
5 shallots
1 stalk serai (lemon grass)
1 clove garlic
1 tbsp chilli paste
1/2 tbsp lime juice
1 tbsp thick santan (think coconut milk)
3 fresh kaffir lime leaves, sliced
2 tbsp oil

Seasoning
1 tsp sugar
1/2 tsp salt
Dash of white pepper
1 loaf sandwich bread
Butter

Blanch diced prawn meat in boiling water till cooked. Flake tuna fish and set aside.
Heat oil in a non-stick wok and saute ground ingredients till fragrant. Stir in flaked tuna and prawns. Mix and fry until well combined. Add lime juice, santan, seasoning and kaffir lime leaves. Fry until dry. Dish out to cool.

Butter the bread slices lightly. Spread the filling between two slices of bread. Place on a sandwich toaster. Toast for 2 1/2 to 3 minutes until bread is slightly golden and crispy. Serve hot with coffee or tea.
