Recipe: Spicy Stewed Cauliflower and Potatoes (Indian)

SPICY STEWED CAULIFLOWER AND POTATOES

1/4 cup vegetable oil
1 medium onion, chopped
2 large potatoes, cubed
1 tsp ground cayenne pepper
1/4 cup lemon juice
1 tsp salt
1/4 tsp turmeric
1 medium cauliflower, cut into florets
1 green chili, seeded, sliced
1 dry red chili, seeded, crushed
1/4 cup water

Heat oil in large pot over medium low heat. Add onion and cook till it turns brown, stirring occasionally.

Stir in potatoes and cook till they begin to brown. Stir frequently.

Add cayenne, lemon, salt and turmeric. Cook for 2 to 3 minutes.

Add cauliflower and chilies and stir well. Add about 1/4 cup water. Continue to cook till the vegetables are tender, adding more water if necessary.

Makes 4 servings
