This takes a little planning and some time, but it is well worth it. Here in California, everyone grows zucchini and then gives it away in the neighborhood. This is a good way to use it up!
CONFETTI VEGETABLES
1 lb. zucchini (green and yellow mixed, if possible), shredded
salt
1 small onion, chopped
1/2 cup butter, divided use
1 garlic clove, chopped
2 large carrots, shredded
2 teaspoons lemon juice
dash of nutmeg
Toss zucchini in colander with 1 teaspoon salt. Weigh down with heavy bowl and 2 pound weight for about 30 minutes to drain.
Saute onion in 1/4 cup of the butter with chopped garlic until yellow.
Add shredded carrots; toss. Cover and simmer for 9 minutes.
Add remaining 1/4 cup butter and zucchini; simmer for 4 minutes, covered.
Season with lemon juice and a dash of nutmeg. Taste for salt and add more if necessary, but it probably won't be.
