Spinach & Artichoke Dip
1 small onion,finely chopped
1/2 cup butter
2/3 cup grated parmesan cheese
8 ounces sour cream
1/4 teaspoon garlic powder
8 ounces Monterey Jack cheese,grated
Salt and pepper to taste
2 (10 oz) boxes chopped spinach, thawed and drained
1 can artichoke hearts, drained and chopped
Saute onion in butter until soft but not brown.
Add sour cream, spinach, artichoke, garlic powder , salt and pepper.
Remove from heat and add parmesan and Jack cheese
Spray a shallow baking dish with cooking spray.
Spread dip into dish evenly and bake at 350 degrees for 15 to 20 minutes or until heated through.
This is best when served warm with pita chips and crackers.
