Recipe(tried): Spinach Balls (using Pepperidge Farm herb stuffing crumbs, freeze ahead)
Appetizers and SnacksThese are YUMMY and very economical and easy and make quite a few. You would need to multiply the recipe but I did a cost of it years ago and it is VERY inexpensive, and easy to serve.
SPINACH BALLS
2 pkg (10 oz each) frozen chopped spinach
2 cups Pepperidge Farm herb stuffing CRUMBS (must be Pepperidge Farm)
2 onions, finely chopped (can use dehydrated just fine)
3/4 cup butter or margarine, melted
1/2 cup grated Parmesan cheese, not fresh (generic is fine)
6 large eggs (7 medium)
1 tbsp. garlic salt or powder
1 tbsp. Accent (necessary!!)
Mix well, mixture will be watery, make about 7 doz. balls (about the size or smaller of ready made meat balls) and bake on ungreased cookie sheet for 20 min at 350 degrees F.
These can be made (cooked and all!) way ahead of time and frozen. Reheat just before party, they are fine even if gone "cold" on the table still goood flavor.
My 12 yr old has asked for these as a treat for years and "he hates everything!"
