SPINACH CHEESE PIE
1/4 c. butter
1/2 c. onion, chopped
3 (10 oz.) pkg. spinach, thawed
3 eggs
1/2 lb. Feta cheese
1/4 c. parsley
1 Tbsp. dill
1/8 tsp. pepper
3/4 c. butter, melted for phyllo dough
16 oz. pkg. phyllo dough leaves
Saute onion in 1/4 cup butter; add spinach. Beat eggs, cheese and spices. In a 13 x 9 x 2-
inch pan layer 8 sheets of phyllo dough (butter each layer with melted butter). Add spinach
mixture and 8 more buttered layers of phyllo dough. Cut crisscross on top layer of phyllo
dough. Bake for 30 to 35 minutes at 350 degrees.
Cheesy Scalloped Potatoes
Prep Time: 25 Min. Cook Time: 10 Min.
2 tablespoons margarine or butter
1 small onion, sliced (about 1/4 cup)
1 can (10 3/4 ounces) Campbell's Condensed Broccoli Cheese Soup
1/3 cup milk
1/8 teaspoon pepper
4 medium potatoes (about 1 1/4 pounds), cooked and sliced 1/4-inch thick
Chopped fresh parsley for garnish
1. In medium skillet over medium heat, heat margarine. Add onion and cook until
tender. 2. Add soup, milk, pepper and potatoes. Heat through. Garnish with parsley.
Serves 4. TIP: Substitute 2 cans (about 16 ounces each) whole white potatoes, rinsed,
drained and sliced for 4 medium potatoes
