SPINACH PESTO
2 pkgs. (10 oz. each) frozen chopped spinach, thawed, drained
1/4 cup minced fresh parsley
2 teaspoons basil
4 cloves garlic
8 tablespoons extra virgin olive oil
4 tablespoons butter or margarine
1/2 cup grated Parmesan cheese
Whirl all ingredients together in blender or food processor until smooth.
