Since I have been dieting for the past few weeks, I haven't made any desserts or any unusual recipes. I made this salad yesterday for an early Easter dinner with my in-laws as they will be in Florida for the holiday. I made the strawberry-asparagus salad last year and enjoyed it very much. Oh, by the way, I've lost 15 lbs.
SPINACH SALAD
fresh spinach, dry
strawberries, sliced
bean sprouts, drained
walnuts, chopped
Dressing:
1-1/2 cup sugar
2 teaspoons dry mustard
2 teaspoon salt
2/3 cup cider vinegar
3 tablespoons onion, minced
2 cups salad oil
Put all ingredients in blender or food processor and blend well. Add 2 tablespoons poppy seeds. DO NOT blend again after poppy seeds are added. Pour over salad and toss. Dressing makes more dressing than salad but stores well - just mix well when tossing with salad. NOTE-When I went to the store to get the spinach they were out so I bought a bag of European mix lettuce and romaine lettuce and it was just as good)
STRAWBERRY-ASPARAGUS SALAD
1/4 cup lemon juice
2 tablespoons vegetable oil
2 tablespoons honey
2 cups fresh asparagus, cut into 1-inch pieces
2 cups sliced fresh strawberries
In a small bowl, combine lemon juice, oil and honey, mix well. Cook asparagus in a small amount of water till crisp tender, about 3-4 minutes, drain and cool. Toss asparagus and strawberries, drizzle with dressing.
