Recipe: Stuffed Cooked Yams (using ground beef and oats)

STUFFED COOKED YAMS

1 pound ground beef
1 stick (1/2 cup) butter or margarine
1 onion, chopped
2 cloves garlic, chopped
1/2 bell pepper, chopped
2 stalks celery, chopped
1 cup oatmeal, uncooked
1 egg
4 large yams or sweet potatoes, boiled
1 cup bread crumbs

Fry meat with butter in skillet until brown. Saute onions, garlic, bell pepper, and celery with meat.

Add oatmeal, egg, and mix well; cook 5 minutes.

Place cooked yams in a separate pan. Make cavity in each yam by removing portion from center of each. Fill cavities with meat mixture and sprinkle with bread crumbs.

Place in a greased baking pan with a little water and cook for 20 minutes in 300 degree F oven.

Makes 4-6 servings
