Standing Rib Roast Beef

Let the roast come to room temp before cooking. Do not put spices on the roast, esp. salt, as it draws the juices to the surface during cooking. Stick a meat thermometer into the center of the roast. Place in baking pan in oven preheated to 500 degrees. Cook for 35 minutes. Then turn heat down to 325 degrees and cook until roast reaches desired temp on therm. remove from oven 10 degrees lower than your desired doneness. Let stand for 30 minutes, as it is still cooking. Ensure you buy your roast from the best meat place you can find.
