Recipe: Starvin' Guy Chicken Pie

Starvin' Guy Chicken Pie

2 tsp. vegetable oil
1 medium onion, chopped (1 cup)
1 clove garlic, minced
1 cup low sodium chicken broth
1 1/2 cups peeled and diced potatoes
1 1/2 cups peeled and diced carrots
1 cup green beans cut into 1 inch pieces
1 can (10oz) cream of mushroom Soup, undiluted (can use lowfat/low sodium)
1 1/2 Tblsp. flour
2 cups chopped cooked chicken breast
2 Tblsp. chopped parsley
1/2 tsp. each basil and thyme
1/4 tsp. pepper

CRUST

1 cup flour
2 tsp. baking powder
1/2 tsp. sage
1/4 tsp. salt
2 Tblsp. butter or margarine
1/3 cup skim milk

Heat oil in large deep skillet. Add onions and garlic, cook over medium heat until tender. Add broth, potatoes, carrots, and green beans, bring to a boil. Reduce heat to medium-low, partially cover and simmer for 15 minutes. Potatoes should be slightly undercooked. Remove from heat.

In a small bowl, stir together mushroom soup and flour and add to the vegetables. Add chicken and remaining ingredients. Stir well. Pour into a medium casserole dish.

For crust:
Preheat oven to 400 degrees F. Combine flour, baking powder, sage and salt. Use a pastry blender to cut in butter until crumbly. Stir in milk. Form a ball with the dough, adding a little more flour if the dough is too sticky. Roll dough out on a floured surface to fit the top of the casserole. Place dough over the chicken mixture. Prick several times with a fork. Bake for 25 minutes or until crust is golden brown. Let cool 5 minutes before serving.
