Recipe(tried): Steak Soup

Here is a recipe that I got from Midwest Living magazine a few years back. I usually double the recipe, as it doesn't make a lot.

Kansas City Steak soup

1/4 cup butter
2 14 1/2 ounce cans beef broth
1/2 of 10 ounce package frozen mixed vegetables (1 cup)
1/4 cup diced carrot
1/4 cup diced celery
1/4 cup diced onion
1/4 teaspoon pepper
3/4 teaspoon Kitchen Bouquet (optional)
1/2 pound beefsteak, cut into small dice sized pieces
1 tablespoon oil
1/2 8 ounce can tomatoes, cut up (1 cup)

In pan, melt butter; stir in flour till smooth. cook and stir over medium heat for 1 minutes. Add broth all at once. cook and stir till bubbly. Add frozen veggies, carrot, onion, celery, Kitchen bouquet and pepper. Bring to a boil. Reduce heat; simmer covered for 10 min. meanwhile brown meat in oil in skillet. Drain well. Add meat and undrained tomatoes to soup. cover and simmer 10 mintues or until tender. 4 servings.
