sticky banana cake with dark chocolate chips
i haven't cooked/baked that much these days but i am slowly incorperating this pastime back into my busy life as a not-so-new mom. lol
anyway, as i am typing away, two cakes are being baked in my oven. DH is going to bring one to work tomorrow.
here is the recipe. enjoy!

sticky banana cake with dark chocolate chips
serve 8-10
125g/4oz soft butter (unsalted preferred), plus a little extra for greasing
2 large eggs, at room temperature, beaten
3 medium-sized ripe bananas, mashed with a fork
250g/9oz cake flour*
1 T. baking powder*
1 pinch round allspice
1 pinch salt
75g/3oz dark chocolate chips**
preheat oven to 180C/350F/Gas 4.
lightly grease a 1kg/2lb loaf tin or a 18cm/7" round cake tin with butter and line with greaseproof paper (loaf tin works best for me.)
beat the soft butter and brown sugar together till smooth. add beaten eggs, then mashed bananas.
sift the flour, baking powder allspice and salt together over the mixture. add the chocolate chips and fold in gently.
pour the mixture into prepared tin. bake in the centre of the preheated oven for 50 min to 1 hour or until a skewer inserted into the center comes away clean. allow to cool in the tin. store in an airtight container. the texture and flavor of this cake will improve if kept for a day or so before serving.
i serve this with a warm chocolate sauce.
* you may replace the flour+ baking powder with SR flour.
** i often add more chips than suggsted as i find 3 oz is too little. if you like chips, you can add up to 5 oz without altering the cake.
