Stilton, Celery and Pear Soup
From Lady McDonald's Scotland - The Best of Scottish Food and Drink.
Serves 8

4 tbsp butter
2 med. onions, minced
4 stalks celery, chopped
2 pears, chopped (skin and all)
5 cups chicken stock
1-1/2 cups Stilton cheese, crumbled
freshly ground black pepper
pinch of grated nutmeg
2 tbsp finely chopped parsley

Melt the butter in a saucepan and add the chopped onions and celery. Cook for about 5 minutes, stirring occasionally, the add the chopped pears and the chicken stock. Simmer gently for 20 minutes.

Cool the soup, then liquefy it (blender or stick blender), adding the crumbled Stilton. Pass through a food mill or sieve to get rid of the stringy bits of celery. Reheat, adding the remaining seasonings.
