Recipe: Cream of Smoked Salmon Soup
SoupsCREAM OF SMOKED SALMON SOUP
1 can (14-1/2 ounces) ready-to-serve chicken broth
1 pkg (8 ounces) cream cheese, cut into cubes
1 cup milk
2 tsp Dijon mustard
1 1/2 tsp chopped fresh or 1/2 tsp dried dill weed
2 green onions (with tops), sliced
12 ounces smoked salmon, flaked*
Heat chicken broth, cream cheese, milk, mustard, dill weed, and onions in 2-quart saucepan over medium heat until cheese is melted and mixture is smooth. Stir in salmon. Heat until hot.
TO MICROWAVE:
Place all ingredients except salmon in 2-quart microwavable casserole. Cover tightly and microwave on high 8 to 10 minutes, stirring every 2 minutes, until cheese is melted. Stir in salmon. Cover tightly and microwave on high 2 minutes longer.
*substitute: 1 can (15-1/2 ounces) salmon, drained And flaked
