Stuffed Jalapenos

I core the fattest jalapenos I can find. Grate some very sharp cheddar very fine, fry up some of your favorite hot sausage, dice some ham very fine, and do the same with some shrimp meat. Keeping the ham, sausage, and shrimp separate, I mix one of those with an equal amount of the cheese and stuff the peppers. That way each popper is a surprise - ya don't know what you're going to get till ya bite it. Wrap a long piece of bacon around the popper and secure the bacon with a toothpick. Dip the popper in some egg and then coat it with some breadcrumbs. Preheat enough cooking oil to just cover the fattest popper so that it just begins to bubble, then Fry then until the breadcrumbs are brown.
