Recipe: Stuffed Zucchini

I do stuffed zucchini pretty much the same as stuffed peppers. Brown hamburger or italian sausage, add onion, garlic, canned tomatoes, rice. Cut zucchini in half lengthwise, scoop out the seeds and pulp leaving about 1/2" of pulp intact.
Chop up the scooped out seeds and pulp and add to hamburger tomato rice mixture.
Put the zucchini halves in a glass baking dish and pour the mixture into and around the zucchini. Bake covered with foil at 350* for about 45 mins. Uncover and put mozarella or parmesan on top and baked uncovered until cheese melts and is lightly browned.
