Recipe: Sugar Coated Popcorn/Caramel Corn (9)

CINNAMON POPCORN
1 c. margarine
1/2 c. sugar
1 tbsp. cinnamon
1/2 tsp. salt (optional)
Pop popcorn, about 2 to 3 quarts. Put in large bowl with lid. (Largest Tupperware bowl works great.) Cook all ingredients over medium heat until sugar dissolves. Pour over popcorn. Put on lid and shake to cover popcorn evenly. Spread on cookie sheet in single layer. Bake at 300 degrees for 15 minutes.

MICROWAVE CARAMEL POPCORN
1 c. brown sugar
1 stick margarine
1/4 c. white corn syrup
1/2 tsp. salt
1/4 tsp. baking soda
3-4 qts. popped corn
1 brown grocery bag
Combine all ingredients except baking soda and popcorn in 1 quart bowl. Put in microwave on high 1 minute. Stir. Put back for 2 minutes on high. Stir in soda. Put popped corn in brown grocery bag. Pour syrup over corn. Close bag and shake. Put bag, closed, in microwave for 1 1/2 minutes. Take out. Shake. Put back for 1 1/2 minutes more. Add nuts if desired. Pour in bowl. Stir as it cools. Eat or store in closed container.

CARAMEL POPCORN IN A PAPER BAG MICROWAVW
3 qts. popped corn
1 c. brown sugar
1/2 c. margarine
1/4 c. white syrup
1/2 tsp. salt
1/2 tsp. baking soda
Put popped corn in a large grocery bag (DO NOT USE recycled paper). Combine sugar, margarine, syrup, and salt in a 1 quart dish suitable for the microwave. Cook uncovered mixture on HIGH for two minutes. Stir. Cook two more minutes on HIGH. Stir in baking soda. Pour brown sugar mixture over popcorn in paper bag. Close bag and shake. Roll down bag to fit in the microwave. Cook 1 1/2 minutes on HIGH. Remove bag and shake. Cook 1 1/2 minutes on HIGH again. Remove and shake. Cook for 45 seconds more on HIGH. Remove bag and pour into bowl to cool. Eat and enjoy!

JEANETTE LONG'S POPCORN
1/3 c. popcorn
1/4 c. oil
1 stick oleo
1/3 c. Karo
1 c. sugar
1/4 tsp. salt
Popcorn, makes about 3 quarts. Bring these to a boil in pan for about 2 minutes. Remove from heat and add 1/2 teaspoon soda, stir well. Pour popcorn in large greased roaster and dribble mixture over the popcorn and stir well. Place in preheated oven at 300 degree until it lightly browns, stir about every 10 minutes with meat fork. Leave in pan until it cools and then separate it. Makes about 3 quarts.

MOTHER GOOSE POPCORN
1 c. sugar
1/4 c. water
1/4 c. oleo
Dash salt
3 drops food coloring
1/2 tsp. vanilla
Mix first 4 ingredients in 2 quart saucepan and cook until soft ball stage, 234 degrees. Take off heat and add vanilla and food coloring. Pour over 3 quarts popcorn and stir.

SUGAR COATED POPCORN AND PEANUTS
1/2 c. sugar
3/4 c. white Karo
1/3 c. water
1/8 tsp. soda
2 c. shelled peanuts
1 tbsp. vinegar
1/4 tsp. salt
1 tbsp. oleo
4 c. popped corn
Combine sugar, syrup, water, salt and vinegar. Stir until sugar dissolves and cook to light crack stage (270). Remove from heat, add oleo and soda. Pour over popcorn and peanuts tossing well.

CRISPY CARAMEL POPCORN
3 to 3 1/2 qts. popped corn
1 c. sugar
1/2 c. dark corn syrup
1/2 tsp. salt
1/2 tsp. vanilla
1/2 c. margarine
Stir all ingredients (except popcorn) in saucepan. Cook over medium heat, stirring constantly until it comes to a boil. Boil 5 minutes. Pour over popcorn in large, shallow baking pan. Stir to coat well. Bake at 250 degrees for 1 hour, stirring every 15 minutes. Remove from pan immediately.

"TOC TOC" (SUGARED POPCORN)
1 can popped corn
1 c. sugar
1 c. cane syrup
1/2 c. water
Dash salt
Pop corn and place in a large pot for later use. Put sugar, syrup, water, and salt into another pot and cook over medium heat until it reaches the soft ball stage. Pour hot syrup over popped corn and stir until all the corn kernels are coated. If the syrup does not turn to sugar as it cools, place the pan of corn in an oven heated to 300 degrees for 5-10 minutes. Serve in small bowls.

MICROWAVE POPCORN
2 to 3 qts. popped corn
1 c. sugar
1/4 lb. or 1 stick margarine
1/4 c. syrup (white, brown or sorghum may be used)
1/8 tsp. salt
1/2 tsp. baking soda
Place popped corn in a brown grocery bag. Mix sugar, margarine, syrup and salt in a large pyrex bowl or pitcher. Bring to a rolling boil (stir a couple times). When it is boiling set timer for 2 minutes of boiling. Then add soda and stir well. Dump this hot syrup on top of corn in the bag. Shake microwave for 1 1/2 minutes. Shake, microwave 1 1/2 minutes. Shake and eat!
