Recipe: Sugar-Ginger Bars (using buttermilk)

SUGAR-GINGER BARS

1 1/4 cups C and H Granulated Sugar, divided use
1 cup butter or margarine, softened
2 eggs
1 1/2 cups all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
2 tsp ground ginger
2 tbsp buttermilk

Cream together 1 cup sugar and butter. Add eggs one at a time, beating well after each addition; set aside.

Combine flour, baking soda, salt and ginger. Stir in butter mixture and then buttermilk. Spread in greased 15 x 10-inch pan. Sprinkle batter with remaining 1/4 cup sugar.

Bake in 400 degree F oven 20 minutes. Cool and cut into 64 bar cookies (1 x 2 inches).

Makes 64 bar cookies
