Recipe: Summer Spaghetti (vegetarian, too!)

Main Dishes - Pasta, Sauces

Just foudn this. You might need it on a very hot summer day...
(I have included the original notes.)

Summer Spaghetti
4 servings

4 tomatoes, chopped (I don't bother to peel and seed them; in fact,
the extra juice helps)
4 oz shredded mozarella
2 tbs lemon juice
1 tsp basil
1/4 cup olive oil
2 garlic cloves, minced
1 tbs fresh parsley, minced
1/4 tsp dried oregano (or 1/2 tsp fresh)
fresh cracked pepper to taste

any or all of the following, to taste:
sliced fresh mushrooms
sliced zucchini
chopped mild, sweet onion (only a little bit)
whatever else you'd like to put in :-)

1lb spinach fettucini or other pasta

Combine all except pasta. Let stand at room
temperature for one hour or more to blend flavors.

Serve over freshly cooked pasta. Optionally top with grated
parmesian-reggiano.
