Recipe(tried): Summer Squash Pie (tastes like coconut custard pie)

For those of you with yellow summer squash coming out of your ears, here is a recipe for a pie that will be a real hit, even for the squash haters. If you don't tell them what it is, they'll think it's a coconut custard pie.

SUMMER SQUASH PIE

1 cup grated raw yellow squash (skin, seeds and all)
1/2 cup sugar
1/2 stick (1/4 cup) butter or margarine, melted
3 eggs
1 rounded tbsp flour
1 tsp lemon extract
1 tsp coconut extract
1 unbaked pie crust (I use a thawed frozen shell - regular or deep dish)

Combine all ingredients for the filling and pour in unbaked pie shell.

Bake in 350 degree F oven 30-35 minutes or until crust is golden brown.
