BUTTER PECAN CHOCOLATE BARS
FOR THE BASE:
1 cup all purpose flour
1 1/2 cups quick-cooking rolled oats
1 cup firmly packed brown sugar
1/2 cup butter or margarine, softened
FOR THE TOPPING:
1 cup pecan halves
2/3 cup butter or margarine
1/2 cup firmly packed brown sugar
1 (6 oz.) pkg. semi-sweet chocolate chips (1 cup)
Heat oven to 350 degrees F.
Lightly spoon flour into measuring cup; level off. In large bowl, combine all base ingredients. Blend at medium speed until mixture is crumbly. Press in bottom of ungreased 13x9-inch pan.
Sprinkle pecan halves over base in pan; set aside.
In medium saucepan, combine 2/3 cup butter and 1/2 cup brown sugar. Cook over medium heat until mixture comes to a full boil. Boil 1 minute, stirring constantly. Pour mixture evenly over pecans.
Bake at 350 degrees F for 17 to 20 minutes or until entire top is bubbly. Remove from oven: immediately sprinkle with chocolate chips. Allow chips to melt 2 to 3 minutes; swirl slightly. Cool completely. Cut into bars.
Makes 48 bars
