Mike I hope this helps you out. I have also tried to get the recipe from Furrs and all I could get was in had pecans and egg whites so when I found this recipe in the Ute Lake Cookbook I had to try it. I have changed it a small amount from the one in the book. This is great because it does not use a crust and is quick and easy to make. Try it you will be suprised how good it is!
MYSTERY PIE (LIKE AT FURRS)
This pie does not need a crust so it is a fast and easy pie to make for surprise visitors.
3 egg whites
1 cup sugar
1 tsp vanilla
23 Ritz Crackers, crushed
1 cup pecans or walnuts, chopped*
Cool Whip, regular or chocolate**
Preheat oven to 350 degrees F. Lightly grease a 9-inch pie pan.
Beat egg whites until stiff. Slowly add sugar and vanilla. Fold in crushed crackers and pecans. Press into prepared pie pan.
Bake 30 minutes at 350 degrees F. Pie will be light in color and look dry, it is not!!!
To serve, top with Cool Whip.
*I use pecans in pie and put chopped walnuts on top of Cool Whip.
**You can use 1/2 pint of whipping cream and 3 tbsp cocoa mix to make topping. Add instant cocoa to whipping cream, blend well. Top pie.
This is very good, hope you enjoy this as much as I do.
